I hate to say this... but I don't think Yuuki is the knight. If you're brave enough to keep reading, I applaud you! haha
I see Kaname being the real knight, since he has been protecting Yuuki from the very beginning, even though she didn't remember him.
Keeping with the chess theory, the knight protects higher-up peices by strategically taking out peices on the other side, so that would possibly make Yuuki the Queen/King peice. Remember how Rido always refers to Kaname as the fake heir/ fake king? Also, Kaname claims that he will act like a Queen bee. This signifies that he isn't the real ruler, but just pretends to be.
Anyway.... That makes Zero the pawn, because Kaname seems to be using him, too...
On the other side, I guess Rido and Shizuka would be the king and queen peices, and Ichiou would be something like a Bishop. o_O I'm not too certain about that, though.
