She thought that Kakashi was his father (Hatake Sakumo), who was called the White Fang of Konoha. He probably fought against Suna at some point, so Chiyo thought Kakashi was him and attacked. That's how I thought it went, anyway.

I thought for sure that it said somewhere that Sakumo killed Chiyo's son in the war, but it looks like you read things more closely than I do, so I could be wrong. Also, regarding the statue guy: maybe he's just random.

I seriously, seriously doubt that. Of course Chiyo would get pissed at the person she thought killed her son. Besides, Konoha was at war with Suna, so of course they're going to kill some people. As for the statue guy, if he was alive to fight Shodaime, he's dead by now. Not a big deal.

How would Sasori get a puppet of the Suna kage? He makes puppets. Just because someone dies during a war doesn't mean their bodies aren't around. Take Tsunade's brother. She saw his body after it had been taken off the battlefield.
Chiyo said Kakashi looked like Sakumo, the guy who killed her son. That's all there is to it.
Then who would he fight? He's Hokage, and if there's a threat to the village (or himself, before the village was created), he goes out to fight. When Konoha was first created, the Hokage was probably alot more active in who/what they had to fight, since there was probably alot of stuff going on. Maybe the guy had Sanin-esque strength or something.

Also, remember that the bodies of the Ninjas were burned or destroyed during war to avoid any kind of enemy jutsu development.

Since we don't know how powerful Shodaime was, we don't know how strong his enemy could have been. Yes they were. What's your point?

Captain Verd Shikalee As for that statue, no one carves a 500 foot statue of nobody. No, they carve statues of dudes fighting their ultimo hero. I'm saying his opponent had a name. An identity. A basis, at least. Or even a source of myth. But he isn't "some guy."
