As it should! All Japanese kanji are "borrowed" from Chinese characters.

I've been practicing my Katakana recently and it's hard getting the symbols perfectly.

If it all possible, hunt down a native Japanese speaker (well, don't actually storm out into the streets with a Japanese-hunting harpoon, but you get the idea...) and show them samples of your writing. They will quickly be able to tell you which "imperfect" characters are legible, and which are not. Japanese does have different fonts and sometimes slight flourishes or variations are totally fine, and other times it can make it hard to read. The best way to tell where you stand is to, as I say, find a native speaker if possible.

Not sure how practical it would be, but since stroke order is important as well, maybe some sort of stroke order chart for the 漢字 could be added?

Easiest thing to do is probably look it up on jisho.org. They have really clear diagrams depicting stroke order and other finer points of writing.
For example: 漢字

There are some words that are okay to write in either kana or kanji. "-tachi 達", the suffix meaning "all" or "group," and the second character in "tomodachi 友達," is one of them. It's a bit more common to write it in kana, but a significant portion of it is also written in kanji.
Also, in manga, the author will also use kanji or kana to affect the tone of a character's speech - more kanji would mean more mature or formal, while more kana is more casual.
