I wonder how many practical uses Sith Alchemy has. It seems like an interesting concept but there's a lot of gray area.

Its good for creaing monsters and constructing new materials, but the constructing materials part is probably only practical if you make them for yourself.

Yeah.
You probably cant alchemically treat the hull of an entire Starship, or mass produce sith swords.
