Yes, if the quality of the metal is below high carbon it would break the blade. Also, the angle of the blade holds a key factor as well.

And it also takes in the effect of the bullets and its size... i highly douht a large round form a rifle or even a large pistol round would be deflectable by a blade. But i could see something like a 22. or 9mm could be deflected...

Another would be the thickness of the blade.

An large boardsword while probbuly would be harder to delfect a bullet would be more suited thanks to its thicker size. A light sword like an katana would be quicker but proubbly to thin of a blade.
