1. the Black Jewels Triolgy by Anne Bishop, I reccommend this to EVERYONE!
2. the Belgariad and Mallorean series by David Eddings
3. The entire Alanna series by Tamora Pierce
4. The entire Wolfblade series by Jennifer Fallon (I'm including not just the Hythrun chronicles but also the Harshini books smile )
5. The Kushiel's Dart series by Jaqueline Carey.

Bah! I don't know, there are way to many books that I heart ! But I'll list the ones off of my head right now.
Lets see.. (These are not in any order)
Narnia series, Bartimaeus series, Inkheart series, Harry Potter series, The land of Elyon series, The prophecy of the stones, The healers keep, Lightland, LOTR series, Ella Enchanted, Just Ella (Ok I know, not really fantasy but it's like Cinderella and Ella Enchanted), Ancestores of Avalon, Midnight for Charlie Bone, and way more other books that I can't think of right now cause I'm hyper from candy. whee

Anything by Mercedes Lackey, particularly her Valdemar Series (which is broken down into numerous trilogies and others...)
A Game of Thrones by George R.R. Martin

I like too many! T-T But, I'll place some of them here, in no particular order:
1. The Last Herald Mage Trilogy by Mercedes Lackey (though anything she writes is good.)
2. Ender's Game (and the other books in the series) by Orson Scott Card
3. The Immortals Quartet by Tamora Pierce
4. The Xanth Series by Piers Anthony (a bit on the sci-fi side, but funny)
5. The Outlander Series by Diana Gabaldon (if it can be classified as fantasy, though I think it's more fictional...It's good either way.)
6. The Redwall Series by Brian Jacques
7. The Dragonlance Chronicles by Margaret Weis and Tracy Hickman
8. Fudoki by Kij Johnson (this one might be classified as fantasy...)
(I just realized that my favorite books are mainly series, not single novels...Heh. ><)
