This might just be me overthinking, however.
some of the posts in the forums here, and on other websites, show the age of the sims, like an actual number. such as 32 years old. Are they just making that up or does it actually show it to you, and also, if it does show it to you, where is it found?

Thats just information added by the player.
The only type of information similar to that is if you hover over the bar that shows what life stage a Sim is in it will tell you how many days they have left before growing up.
The elder section tells you how old a Sim is but in Sim days, not years.
