How does one punctuate quotations in a series?

I had been wondering what was correct, and I figured this would be a good place to ask.

Sentence without any punctuation:
Sally grabbed her bike said See ya and took off

1st try:
Sally grabbed her bike, said, "See ya," and took off.

2nd try:
Sally grabbed her bike, said "See ya," and took off.

3rd try:
Sally grabbed her bike, said, "See ya.", and took off.

Which of these is correct, or are all of them wrong?

Well...I would say...

Sally grabbed her bike and said, "See ya!" before taking off.

But thats me.

Im not really sure on the ones above.

But definitely not the third.

Maybe two or one. Not sure. Sorry I couldnt help more. Commas are a weak point for me.
