Why is Dragon Jack so easy to beat? The first time you beat him seems much harder.

I felt the same way because the second time I beat him, I did it in one super combo. I used berserk (Maxed), slow time (Maxed), and multi-Strike (maxed) I just kept reactivating multi strike and kept using health potions and kept swinging my sword. Next thing I knew he was dead. I was just like wow he didn't even fly off the ground or anything... what a drag. But yeah I would say the first Jack was harder but probably only because most people aren't as leveled as they are by the last one and that you have killer weapons for the last one which you may not have for the first Jack.
