What was Haku's las rank before he became a missing-nin?

No rank. He was never trained to be a ninja I don't think.
His mother disallowed it because of their bloodline limit.
Haku was a little boy when Zabuza took him in.

Yeah he was never a ninja. He was found by Haku, who just trained him to be a ninja. He has so real rank, but if I were to guess I'd just say that he would be a Genin (but a lil more advanced).

There's no suggestion in the manga of his rank or if he even had one. I think Zabusa just trained him.

yeah, Haku was just a kid on the street when Zabuza found him....but he was between Jounin and Chuunin in skill level. He just didn't have the heart to use all his skill.
