Talk a lot. Tell a lot of jokes. Provide a radio and a TV. Make sure there is food available. I think the main thing is that you interact with the guests a lot. (I think having more guests helps too.)

Well I know that having no guests turn up makes it a failure instantly.

When I host parties, I actually don't interfere with their social interactions at all. I just provide food, a radio, tv, a jacuzzi (usually) and...people.
I let them do their own thing, and its fantastic 99% of the time. cool

Generally, if my party is going badly, I have two sims there make out and woohoo... For some reason, that brings the score up some.
Other than that, keep the buffet full, get some hot tubs, and maybe some games (darts or pool work), and things should go well.
Like Ilovedyou yesterday.

Never never never never let any of your Sims pee in their pants. Brings it down to a failure. Make sure to have a hot tub, they're always interested in it. Have food and TV and entertainment like a pool or a dance floor(of course with radio or DJ) I reccomend a bartender (always works for me.)
