When you make chai tea,(tea + soy milk) you can't make it too hot. Then it foams. You really don't want it too cold either. This cafe place has skimmers and non-skimmers. Some of them make it too hot and don't skim the foam. Than the cup is only half full. But some make it hot but do skim so it's good. I think the ideal thing is a warm skimmer, because it isn't too hot and if it foams they skim, so you have a full cup of tea. Cold, warm, and hot non-skimmers, and cold skimmers are no good. Hot skimmers are ok.
