First off I'm almost completely over the pneumonia. The infection is gone and my lungs are draining.
Last night I attempted to make some jam. Unfortunately the recipe called for 8 1/2 cups of sugar. I only had 1 cup and the box of pectin said using less or substituting sugar would result in a set fail. I had to substitute honey and sure enough it failed. My attempt to can, however, was successful. All the cans sealed just fine including a jar only half full.
It's a fail as jam but it works as a strawberry sauce. I want jam though so I decided to cheat. I went to the store and got some jello mix to use. The box makes a total of 2 cups gelatin. I don't want it to have the exact consistency of jello though so I used half the box. The whole batch should yield about 6 or 7 cups of jam so it should work out alright. Thinking about it now I might need the full box after all. I don't want to over thicken it though. Anyway the stuff is all in a pot right now. As soon as my jars sanitize I will recook and try to recan it.
